Tomato-Olive Mint Salad Recipe
Prep: 15 minutes
Makes: 4-6 servings
- 3 medium tomatoes, chopped
- 1/3 cup cured black olives
- 1 clove garlic, minced
- ¼ cup Basil Olive Oil
- 2 tbsp. Lemongrass Mint Balsamic
- ¼ cup fresh mint leaves, chopped
- ½ tsp. each of salt & pepper
- 1 head of lettuce, finely chopped
Combine all of the ingredients, except lettuce, in a medium bowl. Toss to combine and let stand for 30 minutes. Serve over chopped lettuce.
