Oven Roasted Beets

- 3 medium beets, peeled and cut into bite-sized cubes
- ½ cup Italian Plum Balsamic
- ½ cup Herbs de Provence Olive Oil
- 2 cloves garlic, minced
- 1 tsp. dried thyme
- 1 tsp. salt
- freshly ground pepper to taste
Preheat oven to 400 degrees. In a mixing bowl, whisk together the Fig Balsamic, Herbs de Provence Olive Oil, garlic, thyme and salt. Add beets to bowl and toss well to coat.Spread a single layer of beets onto a baking sheet.
Bake for 45 minutes or until tender.
