Orzo Spinach Feta Salad
Cook Time: 10 minutes
1 pkg. (16 oz.) orzo pasta
1 pkg. (10 oz.) baby spinach leaves, finely chopped
½ lb. crumbled feta cheese
zest of 1 lemon
½ cup White Lemon Balsamic
½ cup Garlic Olive Oil
¾ cup walnuts, chopped
¼ tsp. fresh ground black pepper
Boil a large pot of salted water, add the orzo pasta and boil for 8-10 minutes or until al dente. Drain the pasta and rinse in cold water.
Wash, dry and chop the spinach leaves and grate the lemon.
In a frying pan, lightly toast the chopped walnuts and allow to cool.
Toss together the orzo, chopped spinach, lemon zest, crumbled feta, walnuts and ground pepper until well combined.
Whisk together the White Lemon Balsamic with the Garlic Olive Oil. Pour over salad and toss to coat.
