Chocolate Olive Oil Cake

5 tbsps. boiling water
1/3 cup unsweetened cocoa powder
2 tsps. vanilla extract
¾ cup all-purpose flour
½ tsp. baking soda
¼ tsp. salt
1 cup white sugar
3 large eggs
2/3 cup Extra Virgin Olive Oil Or Blood Orange Olive Oil
Preheat your oven to 325 degrees.
Lightly coat a 9” round cake pan with olive oil and flour.
Pour boiling water into the cocoa powder and whisk well to combine. Whisk in the
vanilla and then set aside.

Pour the batter into your prepared cake pan and bake in the middle of your oven for
50 minutes or until a toothpick inserted into the centre of the cake comes out almost
Cool the cake in the pan for 10 minutes then remove the cake from the pan and cool
on a rack.
Serve plain or with ice cream, garnish with icing sugar and fresh fruit, or drizzled
with our balsamic. Your choice!
