Cheese and Salmon Manicotti Recipe

Makes: 4 servings
- 12 manicotti shells
- 1 ½ cups ricotta cheese
- 1 egg
- 2 ½ oz. smoked salmon, chopped
- ¼ cup green onion, finely chopped
- 4 tbsps. Dill Olive Oil
- 2 tbsp. grated parmesan cheese
- 1 ½ cups Dave's Gourmet Red Heirloom Tomato Sauce
Preheat oven to 350 degrees.
Cook pasta in boiling water according to package instructions or until firm to the bite. Drain, cover and set aside.
In bowl, combine ricotta cheese, dill olive oil, egg, salmon, green onion and parmesan cheese. Mix until smooth and fill pasta shells.
Pour half of the tomato sauce into the bottom of a large baking dish. Place pasta shells over sauce and pour other half tomato sauce over pasta shells. Cover and bake for 15-20 minutes or until hot.
