Makes: 6 servings
3 cups cubed watermelon
3 cups cucumber, chunkily sliced
7 or 8 cherry tomatoes
10 fresh mint leaves
3 tbsps of Dill Olive Oil
3 tbsps. Cucumber Melon White Balsamic (or, seasonally, Watermelon Mint Rosé Balsamic)
Mix or shake the Dill Oil and Cucumber Melon Balsamic together and then toss on the salad ingredients.
Serve and enjoy!
