Tomato-Olive Mint Salad Recipe

Makes: 4-6 servings

  • 3 medium tomatoes, chopped
  • 1/3 cup cured black olives
  • 1 clove garlic, minced
  • ¼ cup Basil Olive Oil
  • 2 tbsp. Lemongrass Mint Balsamic
  • ¼ cup fresh mint leaves, chopped
  • ½ tsp. each of salt & pepper
  • 1 head of lettuce, finely chopped

Combine all of the ingredients, except lettuce, in a medium bowl. Toss to combine and let stand for 30 minutes. Serve over chopped lettuce.
