Rhubarb Crumble

Rhubarb Crumble

  • Bake: 40 minutes
  • Makes: 4 – 6 servings

  • 5 cups rhubarb, cut into 1” pieces
  • 1 cup brown sugar
  • ¼ cup water
  • 1 tbsp. Strawberry Balsamic
  • ½ tsp. nutmeg
  • 2/3 cup flour
  • 2/3 cup oatmeal
  • ½ cup brown sugar (for topping)
  • 1/3 cup Butter Olive Oil

Mix rhubarb, brown sugar, water, strawberry balsamic, and nutmeg.  Place in a casserole dish.

Combine flour, oatmeal, brown sugar and a dash of salt. Mix well , add butter olive oil and mix until crumbly. Sprinkle over the rhubarb.

Bake crumble at 350 degrees for 30-40 minutes or until the rhubarb is tender.

Serve warm with ice cream.
