Chili-Lime Roasted Sweet Potatoes Recipe

Makes: 4 servings
- 2 sweet potato or yam
- 3 tablespoons of Persian Lime Olive Oil
- 1 tbsp. chili powder
- ¼ cup of honey
- ¼ teaspoon cayenne pepper
- salt and pepper, to taste
Place your sweet potato or yam in a large pot with water that completely covers it on medium heat for about 15 minutes, until soft. Cool.
Preheat oven to 400 degrees and cut sweet potato into small wedges.
Toss the sweet potatoes in a bowl with the remaining ingredients.
Put them on a cookie sheet with tin foil for 10-15 minutes, turning them over half way through.
Place them on a plate and sprinkle with a bit more salt and chili powder while still hot.
